Thai Curry Orange Roughy
This Thai Curry Orange Roughy is super easy and tasty! The flavor is amazing for the time it takes to put together. It seems fancy but couldn’t be easier to make. Follow the instructions below for the prefect lunch in no time!
2 - 6 oz Wixter New Zealand Orange Roughy fillets
2 tbsp Avocado Oil
1 can Unsweetened Coconut Milk
1 tbsp Prepared Thai Yellow Curry Paste, we prefer Mae Ploy
1 tbsp Fish Sauce
2 tsp Coconut Sugar
1 tsp Ground Turmeric
1 tsp Salt, plus more for seasoning
Cooked Jasmine Rice (for serving)
Cilantro (for garnish)
STEP 1: In a medium sauce pan over medium heat, add coconut milk, yellow curry paste, fish sauce, coconut sugar, turmeric and salt. Bring the mixture to a simmer, then reduce heat to low and let the sauce thicken, about 10 minutes.
STEP 2: Season fish with salt on both sides. Heat the oil in a skillet on medium high. Cook for 3 minutes per side.
STEP 3: To serve, place rice in bowls and top with the fish. Pour the curry sauce on top and add cilantro to garnish.
