Sheet Pan Salmon with Brussels & Sweet Potatoes

This Sheet Pan Salmon with Brussels & Sweet Potatoes is super fast to pull together and delivers big on flavor. A complete meal recipe made in a single pan and clean up is a breeze. Use Wixter's prime center-cut pieces of salmon, for an even cook and great flavor.

Ingredients

  2 6oz Wixter Norwegian Salmon Fillets 
 1 Pound of brussel sprouts (trimmed and sliced in half)
 1 Large Sweet Potato (peeled and cut into 1 inch cubes) 
 2 Tablespoons of Olive Oil 
 1 Teaspoon of Salt 
 1/2 Teaspoon of Pepper
 1 Teaspoon of Paprika
 1 Teaspoon of Cumin 
 1 Teaspoon of Garlic Powder 

Instructions

STEP 1: Preheat oven to 400°
STEP 2: Line a sheet pan with parchment paper
STEP 3: In a small bowl mix the salt, pepper, paprika, cumin and garlic powder. 
STEP 4: Place the Brussels sprouts and sweet potatoes on the sheet pan, drizzle with 1.5 tablespoons of olive oil and toss with half the seasoning blend. 
STEP 5: Roast for 20 minutes. 
STEP 6: Meanwhile season fish with remaining oil and seasoning and set aside. 
STEP 7: When the vegetables have cooked 20 minutes remove the sheet pan and nestle in the salmon and continue to toast for an additional 10 minutes. 
STEP 8: Serve and enjoy!
