Halibut with Olives & Oregano
The Wixter Seafood Pan-Seared Alaskan Halibut with Crushed Olives and Oregano is a dish you must try! A delightful dish to make any evening memorable for you and your guests.
Ingredients
4 Wixter Alaskan Halibut Fillets
2 Cups of Mild Green Olives (Pitted and Crushed)
2 Tablespoons of Fresh Lemon Juice
Leaves from 6 Sprigs of Fresh Oregano
¼ Cup + 2 Tablespoons of Olive Oil (Divided)
2 Garlic Cloves (Thinly Sliced)
2 Tablespoons of Fresh Parsley (Chopped)
2 Lemons (quartered, for serving)
Kosher Salt + Freshly Ground Black Pepper
Instructions
STEP 1: In a bowl, combine the olives, lemon juice, half the oregano leaves and ¼ cup of the olive oil. Season with salt and pepper and set aside.
STEP 2: Season the halibut with salt and pepper.
STEP 3: Heat the remaining 2 tablespoons of olive oil in a very large skillet over medium heat.
STEP 4: Cooking in batches, add the halibut making sure not to over crowd the pan. Cook until the fillets are a deep golden brown on one side 4-5 minutes.
STEP 5: Flip and cook another 4-5 minutes on the other side. Place the cooked fish on a serving platter.
STEP 6: Add the sliced garlic to the pan and cook 1 or 2 minutes.
STEP 7: Stir in the olive mixture and take off the heat.
STEP 8: Spoon the olive mixture over the fish and garnish with the parsley and remaining oregano.
STEP 9: Serve with cut lemons if desired.
