Sardine Toast with Lemon Mayo & Fennel Salad
Just the thing to eat when you’re hungry and looking around the house for a quick tasty dinner. It's packed with flavor and sure to please. This Sardine Toast with Lemon Mayo & Fennel Salad is all you need to satisfy your hunger in a pinch.
Ingredients
2 Cans of Wixter Seafood Sardines
1/2 Cup Mayo
Zest of 1 Lemon
1 Garlic Clove (grated)
Juice of 1 Lemon
2 Teaspoons of Olive Oil
Pinch of Salt & Pepper
2 Tablespoons Parsley Leaves
1 Medium Fennel Bulb (thinly sliced)
2 Radishes (thinly sliced)
4 Slices of Sourdough Bread (toasted)
Instructions
STEP 1: In a small bowl, mix together mayo, lemon zest and garlic and set aside.
STEP 2: In another bowl, gently mix lemon juice, olive oil, salt & pepper, sliced fennel, sliced radishes and parsley leaves.
STEP 3: On toasted bread, smooth 2 tablespoons of mayo and place three sardines and top with fennel salad on each.
