Yellow Curry With Cod

The perfect dish to enjoy on those cold days. Our Yellow Curry with Norwegian Cod is delightful. The best way to warm up when the weather turns cold.


2 Wixter Norwegian Cod Fillets (Cubed) 
2 Tablespoons of Olive Oil 
1 Cup of Yellow Onion (Diced)
3 Tablespoons of Yellow Curry Paste 
3 Medium Carrots (Sliced 1 Inch Thick)
3/4 Pound of Small Yellow Potatoes (Cubed)
1 15oz Can of Coconut Milk 
2 Cups of Veggie Broth 
2 Teaspoons of Sugar 


STEP 1: In a large stock pot add 2 tablespoons of olive oil over medium heat.
STEP 2: Add diced onion and cook 3-4 minutes until opaque.
STEP 3: Add curry paste to the pan and cook for 1 minute.
STEP 4: Next add coconut milk and stir making sure to get all the curry and onion from the bottom of the pan up.
STEP 5: Add vegetable broth and bring to a boil.
STEP 6: Next add sugar, carrots, and potatoes and bring the heat to a simmer for 8-10 minutes (until tender).
STEP 7: Lastly add cubed cod and cook for 2 minutes more. Turn off heat and serve over rice.
