Preheat oven to 400˚F.
STEP 2: In a baking pan, arrange the artichoke halves (cut side down), onions, and garlic cloves. Drizzle with olive oil and cover pan tightly with tinfoil. Bake for 40 minutes.
STEP 3: When the vegetables are done, remove them from the oven and set aside without removing the tinfoil.
STEP 4: Heat a cast-iron skillet to medium-high. Pat dry the steelhead and season with salt and pepper.
STEP 5: Once the pan is hot, place the steelhead flesh side down and do not move it for 2 minutes.
STEP 6: Gently loosen the fish, flip, and continue cooking for 2 more minutes.
STEP 7: Remove and plate if you like your steelhead rare in the middle. Continue cooking for an additional 1-2 minutes if you prefer your fish cooked all the way through.
Remove the tinfoil from the vegetables, being careful of any steam. Arrange the vegetables next to the steelhead.STEP 9:
Garnish with lemon wedges and enjoy!
