Ingredients
1 T Fresh ginger, minced
4 T Fresh cilantro, chopped
1 Lime, halved
2 c Vegetable broth
3 Bird’s eye chilies (or other hot chilies), sliced
1 Bag of New Zealand Mussel Meat

Instructions
Step 1: Combine broth, minced ginger, and one of the peppers in a saucepan over medium heat.
Step 2: Let simmer for 5 minutes.
Step 3: Reduce heat to low, add New Zealand Mussel Meat and 3 T of cilantro; cook for 5 minutes.
Step 4: Remove the pan from the heat and add the juice from one of the lime halves.
Step 5: Divide the broth between two bowls. Slice the other half of the lime into wedges.
Step 6: Serve with extra cilantro, lime wedges, and sliced chilies. Enjoy!
